Township 7 Vineyards & Winery NBO Cabernet Sauvignon Merlot 2018

TASTING NOTES A classic “Left-bank” Bordeaux style blend of Cabernet Sauvignon and Merlot, this vintage has heady aromas of cassis, dark cherry and cocoa. The sumptuous palate displays rich black fruit up front and finishes with caramel and firm tannins. Decanting recommended before serving to release aromatics and soften palate. STYLISTIC NOTES This Cabernet Sauvignon dominant blend perfectly displays the terroir of our estate Blue Terrace vineyard in North Bench Oliver. Its stony soils retain heat throughout the cool September and October evenings allowing the Cabernet Sauvignon to thoroughly ripen. Approximately one-third Merlot, the varietal adds subtlety and softness to the structure of the Cabernet. A full-bodied wine, it was fermented over 16 days with remontage 2 times a day. Barrel aged for 24 months in both barriques and large format French oak.
