Sherrah Wines Rosé Grenache 2021

60-year-old Grenache vines grown in deep sand on the Wait vineyard high in the Blewitt Springs subregion were hand harvested early at 12 Baume specifically for Rose production. The bunches were destemmed and allowed to rest in the press for 3 hours to extract just the right amount of colour, flavour and tannin. Fermentation was carried out at low temperature (12-13C) in stainless stell in order to retain aromatics. The pressings were fermented in seasoned puncheons, and a small percentage of this was blended back with the tank portion . No fining.
