Grapes are hand-harvested at 24.5–25.0 °B and cold soaked for two days before being inoculated with yeast. During fermentation, colour/flavour extraction takes place with regular pumpovers every six hours, along with two to three manual punchdowns of the grape cap. A maximum temperature of 27 °C is reached. On completion of fermentation, a further 14 to 18 days of extended skin maceration takes place before

pressing and barrelling in 225l French oak. Malolactic fermentation is completed in barrel and maturation takes place over 18 months. 100% 1st fill barrels of only of tight and medium grain with medium and medium-plus toasting. A premium selection of only 22 barrels.

The Cederberg Five Generations Cabernet Sauvignon 2020 is set to challenge your previous ideas of this noble cultivar. This wine is all about refinement, purity and intensity of fruit – both in its colour and on the nose – with dark brooding black fruit, cassis and soft black pastels, and only the

faintest hint of cedar. On the palate, the fruit keeps dancing, changing pace, allowing the delicate acidity and feather-light tannins to ease the wine from start to finish. This wine will benefit from a few years of ageing before consumption to show off its true beauty. If you simply can’t wait, we recommend decanting the wine before serving.
