Bostock Wines Vicki’s Vineyard Merlot 2018

An autumnal feel with varietal ripe plum and dried herbs and a warming core creating comfort. Simplistically sweet fruited but with a level of subtle spice that forms an exotic, luxurious finish. Hand harvested and cooled overnight before destemming to small stainless steel open-top fermenters. Inoculated with neutral yeast and twice daily plunges carried out during the fermentation. Left on skins for 21 days before pressing to 50% new French oak barriques. Natural malolactic fermentation completed in barrels. Racked from barrel once during the 18 months. Light filtration.
