Grapes are hand-harvested early morning at 23.5° balling. The grapes are whole bunch pressed and then after one day of juice settling barrelled down in 400l French oak barrels. Natural fermentation takes place over the next 40 – 60 days with strict temperature control during fermentation. Once fermentation is complete the wine is matured for 10 months with monthly battônage of the lees. No malolactic fermentation takes place. Tight grain with medium toast barrels is used for maturation, 18% 1st fill, 18% 2nd fill, 18% 3rd fill and 46% older oak.
A glorious pale golden-yellow colour, the nose is a kaleidoscope of aromas including butterscotch, crème brûlée, honey-roasted nuts, citrus peel, candied pineapple and preserved ginger. All of these glorious aromas echo on the palate with quince, lemon curd and Cape gooseberries brought together by the citrus linearity that c reates a focus and freshness on the palate.
Optimum Drinking Time: Two to four years.
