Winemaking: Hand-harvested Chardonnay (64%), Pinot Noir (34%) and Pinot Meunier (2%) grapes from vineyards in the Niagara Peninsula. The base wine is a blend of vintages (59% 2013 vintage, 25% 2012 vintage, 5% 2011 vintage, 9% 2010 vintage, with the remainder from older vintages), adding depth and complexity. This méthode traditionnelle sparkling wine spent 60 months aging ‘sur lie’ in our underground sparkling wine cellar (Tirage was September 8, 2014). The wine was then disgorged September 19, 2019 and a dosage of the base wine was added back.

    Gorgeous pale gold. Cracked wheat aromas. I really enjoy the savoury nature of the palate. The palate has a long, defined core of acidity. Cracked wheat. Long. Complex. Composed. Very complete palate.

    Lemon straw hue. Forward toasty aromas, toasted marshmellow. Excellent intensity, toasted brioche complexity and long lemony, finish with nutty, toasty accents. Dosage is perfectly integrated.

    Classical lemon curd, grapefruit white peach, yeasty aromas and flavours, Fresh al dente textures, creamy bubbles and long flinty notes.
