The Maurice O’Shea Shiraz is the flagship red wine for the Mount Pleasant and is a blend of the best fruit available, only made in the best years. Taken from the Old Hill (1880), Old Paddock (1921), Rosehill 1946 and 1965 Vines, it is truly a complex and unique wine to Mount Pleasant. The grapes were entirely handpicked, destemmed and whole berries sent to open top tanks for cold soaking before inoculation and fermentation at 18-25 ?C for another 9 days. The wine is then gently pressed to less than 20% large format new French oak barrels for 12 months maturation before blending and bottling.
