The Heron marks a new step in the evolution of Donum Chardonnay: a wine selected based on the vinification technique. The base wine for The Heron comes from the same pressing as our Estate Chardonnay, but from there the two paths diverge. Where the Estate Chardonnay goes to barrel, The Heron is instead transferred to a concrete amphora where it is fermented and aged for 10 months. The wine is then transferred to stainless steel barrels to complete the aging process.

White peach apricot touch sickly aromas. Worked style with ample cool yellow fruits, one chalky textures and pronounced new oak. Pronounce acidity at the finish.
